Apple
Dumplings
|
3 apples, peeled, cored and quartered. |
1 tsp baking powder |
1 cup flour |
1 tbsp sugar |
1/2 tsp salt |
3 tbsp shortening |

1.3 cup milk |
|
|
Make a soft dough of the flour, salt, baking powder,
sugar, shortening and milk. Pat to about 6mm thickness on floured
board. Cut in squares. Place 3 quarters of apple in centre
of each square. Sprinkle each with 1 tablespoon brown sugar, 1/8
teaspoon cinnamon, and dot wit a teaspoon of margarine or butter.
Fold dough over the apples and seal. In a 23cm square pan put 2
tablespoons brown sugar, 1 tablespoon butter and 1/2 cup water.
Place dumplings in the syrup and bake for 30 minutes at 180C.
Baste with syrup occasionally and serve warm. |

Apple
Crisp
|
6 tart apples, peeled and sliced |
1/2 teaspoon cinnamon |
1/2 cup sugar |
1/2 teaspoon nutmeg |
1 tablespoon lemon juice |

Combine the sugar, cinnamon, nutmeg and
lemon juice and toss with the apples. Place in a 23cm square pan.
Place the following topping over the apples and bake 45 minutes in a
190C oven. |

Crisp Topping
|
1/2 cup brown sugar |
1/2 teaspoon salt |
3/4 cup sifter flour |
1/2 cup softened butter |

Crumble together the above ingredients. 1/2 cup
chopped nuts added to the topping or the apple mixture is a nice
addition. |

Everyday Baked Apples
|
6 large baking apples |
1 teaspoon cinnamon |
1/2 cup sugar |
3 tablespoons margarine/butter |
|
|
Core apples and peel about half way down. Mix
together the sugar and cinnamon. Place apples in baking dish, fill
centres (core area) with sugar mixture. Put 1/2 tablespoon
margarine/butter on each filled centre. Fill baking dish to about
1cm with hot water. Bake up to 1 hour at 160C depending on size
and type of apple used. |
