Favourite Cakes

 

Apple Spice Cake

1 cup sugar 1/2 cup cold coffee
1/2 cup shortening 1 1/2 cups flour
1 egg 1 tablespoon soda
1/2 tablespoon cinnamon 1/2 cup chopped walnuts
1/4 tablespoon cloves 1/2 cup peeled apple, diced
1/4 teapsoon nutmeg 1/2 cup raisins
   
Cream together shortening, sugar and eggs.  Sift together and add dry ingredients alternately with coffee.  Fold in the apples, raisins and nuts.  Spread into a well greased 12x32cm pan.  Sprinkle following topping on batter and bake 45 minutes at 180C.

 

Raisin Apple Cake

4 cups peeled, diced apples 2 teaspoon cinnamon
2 eggs 3/4 cup vegetable oil
2 cups sugar 1 cup chopped nuts
2 1/2 cups sifted flour 1 cup raisins
2 teaspoons soda 1 cup chocolate bits
3/4 teaspoon salt  
 
Beat eggs well and pour over the diced apples.  Sift dry ingredient into bowl.  Add vegetable oil and mix well.  Stir in apple and egg mixture.  Add nuts, raisins and chocolate chips.  Batter will be thick.  Pour into a well greased 12x32cm pan and bake for 1 hour at 180C.

 

Easy Apple Cake

1/2 cup butter or margarine 1 teaspoon nutmeg
2 eggs 2 teaspoons soda
2 cups flour 1/2 teaspoon salt
2 cups sugar 4 cups peeled, diced apples
1 teaspoon cinnamon  
 
Cream butter, sugar and eggs.  Sift dry ingredients and add to butter mixture.  Fold in apples.  Bake at 180C for 55 minutes or until cake tests done.

 

Glazed Apple Cake

1 1/2 cups salad oil 1 teaspoon salt
2 cups sugar t teaspoon all spice
5 eggs 1 teaspoon cinnamon
2 tablespoons vanilla 1 cup walnuts, chopped
2 cups flour 3 cups chopped, peeled apple
 
Place all ingredients except nuts and apples in large mixing bowl and mix well.  Add half the nuts and all the apples.  Pour nixture in a 12x32cm greased pan.  Bake at 180C for 1 hour.  While hot, glaze with the following:

Glaze

1 cup brown sugar Butter or margarine
2 teaspoon corn syrup Remaining 1/2 cup nuts
1/2 cup milk  
2 tablespoons vanilla 1 cup walnuts, chopped
 
Put all ingredients except nuts in a saucepan and heat to boiling for two minutes.  Add nuts and pour warm over warm cake.

 

Applesauce Fruitcake

1 1/2 cups flour 1/2 teaspoon ground all spice
1 cup granulated sugar 1 cup applesauce
1 tablespoon cocoa 1 cup chopped pecans
1 teaspoon baking soda 1 cup chopped, mixed  fruits
1/2 teaspoon salt 1/2 cup raisins
1/ teaspoon ground nutmeg 1/2 cup buttermilk
6 tablespoon melted margarine  
   
In large mixing bowl, stir together dry ingredients.  Add applesauce, nuts, mixed fruit, raisins, buttermilk and butter and mix lightly but thoroughly.  Turn into a greased and floured 6 cup ring mold or two 20cm bread tins.  Bake at 160C for 50 to 55 minutes.  Cool 10 minutes before removing from pans.
