Apple
Potato Salad
|
8 cups boiled, diced potatoes |
3 tablespoon vinegar |
2 cups unpeeled apples, diced |
Salt and pepper |
1 cup diced celery |
1 tablespoon celery seed |
1 onion, chopped |
1/4 cup prepared mustard |
6 hard boiled eggs, diced |
1 1/2 cups mayonnaise |

Place potatoes in large bowl and sprinkle vinegar on
them. Let rest 10 minutes. Add remaining ingredients and
gently toss to mix well. Serves 8 to 10. |

Ham
Salad
|
2 cups diced, cooked ham |
1 small can green grape,drained |
1/2 cup slice celery |
1/2 cup French dressing |
3 diced, upared apples |
2 tablespoons mayonnaise |
1 cup diced, sharp cheddar |
|
1/2 cup drained crushed pineapple |
|
|
Combine ham, celery, apples, cheese,
pineapple and grapes in a bowl. Mix together the French dressing
and mayonnaise and toss together with the salad ingredients. |

Chicken and Apple Salad
|
2 cups diced, cooked chicken or turkey |
3 diced, unpeeled apples |
1 cup diced celery |
Sliced almonds or broken cashews |
1/2 cup diced onion |
1/2 cup mayonnaise |
1/4 cup sliced back olives |
1.4 cup sour cream |

|
Combine chicken, celery, onion, olives and apples.
Combine the mayonnaise and sour cream and thin with a little milk or
cream if needed. Pour over the chicken mixture and toss to coat.
Sprinkle the top with cashews or almonds. |

Apple Cinnamon Salad
|
100 g cherry flavoured jelly |
1 cup diced raw apple |
1 cup hot water |
1 cup chopped celery |
1/4 cup cinnamon "red hots" |
1/4 cup chopped nutmeats |
1/2 cup boiling water |
1/4 cup crushed pineapple, drained |
|
|
Dissolve jelly in one cup hot water. Dissolve the
"red hots" in the 1/2 cup boiling water. Combine the two, and add
three ice cubes and stir to dissolve. Chill until slightly set.
Add apple, celery, nuts and pineapple, and chill until firm. |
