Favourite Pies

 

Traditional Apple Pie

Pastry for 2-crust pie 1 teaspoon cinnamon
4 cups peeled.sliced apples 1/4 teaspoon salt
1 cup sugar 3 tablespoons margarine
2 tablespoons flour  
   
Combine apples, sugar, flour, cinnamon and salt.  Pile into pie shell.  Dot with butter and add top crust.  Make steam vents, moisten top crust slightly and dust with sugar.  Bake for 45 minutes at 190C.

 

Apple Custard Pie

1 unbaked pie shell 1 1/2 cups heavy cream
2 tablespoons flour 1 teaspoon cinnamon
1/4 cup sugar 1/4 teaspoon nutmeg
6 large apples peeled and sliced 3 tablespoons flour
1 beaten egg 3/4 cup sugar
 
Sprinkle the 2 tablespoon flour and 1/4 cup sugar over pie shell in pan.  Arrange apples in the shell.  Combine egg, cream, spices, flour and 3.4 cup sugar with a beater and pour over apples.  Bake at 220C for 40 minutes longer.

 

Deep Dish Apple Pie

12 cups tart apples, slice and peeled 1 cup flour
1 cup sugar 1/3 cup shortening
4 tablespoon flour 1/8 teaspoon salt
1 teaspoon cinnamon Cold milk
1/2 teaspoon nutmeg Sugar
  3 tablespoon butter or margarine
 
Mix the 1 cup sugar, 4 tablespoon flour, cinnamon and nutmeg with the apples and put in a 20 x15cm baking dish.  Dot with the butter or margarine.

Mix the 1 cup flour with salt and shortening until crumbly.  Add cold milk to mix lightly and form into a boll (about 4 tablespoons).  Roll on floured surface to a 30x20cm rectangle.  Place over apples.  Cut slit in crust, brush with mil and dust with sugar.  Bake 45 minutes at 200C.

 

Brown Sugar Pie

5 cups tart apple slices 1 teaspoon cinnamon
1 cup firmly packed down sugar 1/4 teaspoon mace
3 tablespoons flour 1 tablespoon lemon peel
1/4 teaspoon salt Pastry for 2 crust pie
   
Combine apple slices with sugar, flour, spices and grated lemon peel.  Line 21cm pie pan with pastry and fill with apple mixture.  Dot with margarine or butter and cover with top crust.  Cut slits for steam to escape, brush top crust with lukewarm water and sprinkle with white sugar.  Bake 45 minutes at 190C.

 

Dutch Crunch Pie

1 unbaked pie shell 1 teaspoon cinnamon
6 large apples peeled and sliced 1/2 teaspoon salt
1 tablespoon lemon juice 1/2 cup finely chopped nuts
   
Combine apples, lemon juice, sugar, cinnamon, salt and flour and pile into unbaked pie shell.  Sprinkle with topping (below) and bake at 220C for 10 minutes and 180C for 30 additional minutes.
 

Topping

2 tablespoon butter or margarine 1/4 teaspoon salt
2 tablespoon brown sugar 1/2 cup finely chopped nuts
4 tablespoon flour  
   
Mix and sprinkle over top of unbaked pie.
